Ingredients:
1-1/2 Cups Flour
1-1/2 Tsp Baking Powder
3 Tbsp Shortening or Butter
1/2 Cup Milk
4 Whole Peaches, peeled and sliced
3/4 Cup sugar
Crust: Sift together flour and baking powder. Work in 1 tablespoon of the shortening, and when mixed add milk.
Mix peaches, sugar, and remaining shortening (2 tablespoons). In bottom of baking dish invert a cup, around this arrange peaches, and over all place dough patted out to about 3/4 of an inch thick. Bake for 40 minutes in moderate oven until crust is brown.

4 c. peaches, sliced
½ c. brown sugar
4 tsp. arrowroot powder
¼ tsp. nutmeg
½ c. water
1 T. lemon juice
1 c. self-rising flour
2 T. sugar
2 tsp. baking powder
¼ c. vegetable oil
1/3 c. water
Pinch of salt
Preheat oven to 400 degrees F. In a medium pot, combine brown
sugar, arrowroot, nutmeg, and ½ c. water. Cook over low heat,
stirring until bubbly and the mixture begins to thicken.
Add the peaches and the lemon juice. Cook until the entire
mixture is heated through. Place in a 1-½ quart casserole dish.
To make the cobbler topping, mix together the flour, sugar,
baking powder, and a small pinch of salt. Stir in the oil and
the water. Mix lightly, until the mixture is thoroughly
moistened.
Spoon the biscuit mixture over the hot fruit filling in about 6
mounds.
Bake for 20 to 25 minutes and serve warm.

Maple Peach Cobbler

As a time-saving tip, pat the prepared dough flat instead of
forming it into a ball. This will make it easier to roll out
when you remove it from the refrigerator.
3 1/2 tablespoons whole-wheat flour
2 tablespoons light margarine, chilled and cut into pieces
1 teaspoon cold water
Nonstick cooking spray
1 large fresh ripe peach, peeled, pitted, and sliced
1 teaspoon fresh lemon juice
1 teaspoon sugar substitute
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons sugar-free maple-flavored syrup
One container 2:90 vanilla yogurt with fiber (providing up to 90
calories)
In a medium bowl, combine the flour and margarine. Using a
pastry cutter or 2 knives, cut the margarine into the flour
until the mixture resembles coarse meal. Add the cold water,
stirring it in with a fork, and form the dough into a ball. Pat
the dough ball flat, wrap it in plastic wrap, and refrigerate it
for at least 1 hour. Preheat the oven to 375°F. Spray a small
round (5-inch-diameter) baking dish with nonstick cooking spray
and set it aside. In a small bowl, gently toss the peach
slices with the lemon juice, sugar substitute, cinnamon, nutmeg,
and maple syrup. Place the peach mixture into the prepared
baking dish. When the dough has chilled, gently roll it to the
approximate size of the baking dish to form the top crust. Place
the crust over the peach filling and cut several steam vents in
the crust. Bake the cobbler for 30 to 45 minutes, or until the
crust is golden brown and the filling is bubbling. Transfer to a
wire rack to cool slightly. Top with the yogurt and serve.

Two Good Southern Recipies - Country Fried Steak and Peach Cobbler

1. Fried Steak
Take a pack of beef cubed steaks (enough for one per person). Dredge it first in flour, then egg wash, finally in bread crumbs. Place the steaks in a hot skillet of canola oil. The oil should cover one side of the steak. Cook on each side for about five minutes or until golden brown.
For gravy take the steaks out of the pan and keep them warm in an oven. Pour out most of your oil and add flour to the pan. Stir with a whisk. Add one can of evaporated milk, slowly while continuing to whisk. If gravy is too tick you can try adding a little milk.
Now you have a quick and easy supper that is sure to please. I like to serve mine with mashed potatoes, but rice is also good with it.
2. Peach Cobbler
This is a very easy dessert that anyone should be able to make. First get one large can of peaches in thick syrup at the store. You will also need self rising flour, one stick of butter, milk, and powdered sugar.
Place your stick of butter in a backing pan (I use the clear ones). Heat your oven to 375 degrees. Put pan with the butter in the oven, but the time you get the other ingredients ready it should be melted.
In a big bowl combine one cup of self rising flower, one cup of powdered sugar, and one cup of milk. Stir until combined.
Take your baking pan out of the oven and pour this mixture in the pan over the butter. Do not stir. Then spoon in your peaches. Again do not stir.
Bake the cobbler for approximately 45 minutes or until the top is golden brown. Serve with a scoop of your favorite ice cream
