Maple Peach Cobbler
by Dr. Steven A. Schnur

Dr. Steven A. Schnur's new book, The Reality Diet, has recipes the entire family will enjoy--including the kids. Packed with yummy desserts (non-sugar), high-energy breakfasts, and easy-to-fix dinners, we know you'll enjoy them all, including this one for Maple Peach Cobbler.

As a time-saving tip, pat the prepared dough flat instead of forming it into a ball. This will make it easier to roll out when you remove it from the refrigerator.

3 1/2 tablespoons whole-wheat flour
2 tablespoons light margarine, chilled and cut into pieces
1 teaspoon cold water
Nonstick cooking spray
1 large fresh ripe peach, peeled, pitted, and sliced
1 teaspoon fresh lemon juice
1 teaspoon sugar substitute
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons sugar-free maple-flavored syrup
One container 2:90 vanilla yogurt with fiber (providing up to 90 calories)

In a medium bowl, combine the flour and margarine. Using a pastry cutter or 2 knives, cut the margarine into the flour until the mixture resembles coarse meal. Add the cold water, stirring it in with a fork, and form the dough into a ball. Pat the dough ball flat, wrap it in plastic wrap, and refrigerate it for at least 1 hour. Preheat the oven to 375°F. Spray a small round (5-inch-diameter) baking dish with nonstick cooking spray and set it aside. In a small bowl, gently toss the peach slices with the lemon juice, sugar substitute, cinnamon, nutmeg, and maple syrup. Place the peach mixture into the prepared baking dish. When the dough has chilled, gently roll it to the approximate size of the baking dish to form the top crust. Place the crust over the peach filling and cut several steam vents in the crust. Bake the cobbler for 30 to 45 minutes, or until the crust is golden brown and the filling is bubbling. Transfer to a wire rack to cool slightly. Top with the yogurt and serve.

Want to know more about The Reality Diet?

The reality is that extreme diets that promise instant results just don't work. For one thing, you lose muscle and water, but little fat, and may seriously jeopardize your health in the process. For another, restricting certain foods and food groups deprives your body of essential nutrients. In the end, the faster the pounds come off, the faster they pile back on.

After seeing many of his patients fail on these kinds of fad diets, and suffer health-threatening side effects, Dr. Steven A. Schnur, founder of the largest cardiology practice in South Florida, developed a new, breakthrough program. The Reality Diet is not low carb, low fat, or high protein. Instead it is rich in a wide variety of foods that are high in one key fat-fighting ingredient--fiber. Not only does fiber stop hunger, it also significantly lowers the risk of heart disease, diabetes, and a host of other illnesses.

Flexible and forgiving, The Reality Diet is for real people living in the real world. With eight weeks of mouthwatering menus, more than 200 quick and easy recipes, tips for eating in restaurants and navigating holidays, as well as an effective exercise program, The Reality Diet is both a comprehensive weight-loss plan and a blueprint for lifelong health.

Two Good Southern Recipies - Country Fried Steak and Peach Cobbler
By Rich Wheeler

1. Fried Steak

Take a pack of beef cubed steaks (enough for one per person). Dredge it first in flour, then egg wash, finally in bread crumbs. Place the steaks in a hot skillet of canola oil. The oil should cover one side of the steak. Cook on each side for about five minutes or until golden brown.

For gravy take the steaks out of the pan and keep them warm in an oven. Pour out most of your oil and add flour to the pan. Stir with a whisk. Add one can of evaporated milk, slowly while continuing to whisk. If gravy is too tick you can try adding a little milk.

Now you have a quick and easy supper that is sure to please. I like to serve mine with mashed potatoes, but rice is also good with it.

2. Peach Cobbler

This is a very easy dessert that anyone should be able to make. First get one large can of peaches in thick syrup at the store. You will also need self rising flour, one stick of butter, milk, and powdered sugar.

Place your stick of butter in a backing pan (I use the clear ones). Heat your oven to 375 degrees. Put pan with the butter in the oven, but the time you get the other ingredients ready it should be melted.

In a big bowl combine one cup of self rising flower, one cup of powdered sugar, and one cup of milk. Stir until combined.

Take your baking pan out of the oven and pour this mixture in the pan over the butter. Do not stir. Then spoon in your peaches. Again do not stir.

Bake the cobbler for approximately 45 minutes or until the top is golden brown. Serve with a scoop of your favorite ice cream
